Stir-fried Beef Noodles with Curry Paste - Mee Sua
2 tbsp oil
4 small garlic cloves, finely chopped
1 tbsp red curry paste
1 pound beef tenderloin steak, thinly sliced
5 nests of egg noodles, soaked in cold water for 15 minutes and drained
2 tbsp fish sauce
2 tbsp light soy sauce
2 cups beansprouts
2 carrots, cut into matchsticks
2 large fresh red chillies, diagonally sliced
2 scallions, chopped into 3cm pieces
Heat oil in a wok, add garlic and stir-fry until golden. Add curry paste and stir well. Add beef and stir-fry for about 5 minutes, stirring well. Add remaining ingredients and cook for a few more minutes.
