Minced Lamb Curry

Prepare Lamb

Cook lamb with 1 clove garlic and bay leaf for 10 mins on low/medium heat. That reduces smell of lam. Rinse and set aside.

Curry

Heat oil on low/medium and fry onions for 15 mins until golden brown. Add cinnamon, clover, garlic, ginger, cardamom and green chili for 2 mins. Increase heat to medium/high and add lamb. Fry for 3 mins. Stir frequently. Add turmeric, cumin, ground coriander and half of garam masala. Fry for another 3 mins. Reduce heat to medium. Add tomatoes and cook until dissolved. Add 500ml water and cook until dryish. Stir in fresh coriander and remaining garam masala. Leave some coriander to garnish.
