- 5 large dried red chillies
- 0.5 tsp sea salt
- 2 tbsp shallots, finely chopped
- 5 tbsp garlic, finely chopped
- 1 tbsp galangal, finely chopped
- 2 stalks lemongrass, finely chopped
- 1 tbsp kaffir lime peel, finely chopped
- 1 tbsp coriander root, finely chopped
- 1 tsp white peppercorns
- 2 tsp coriander seeds, roasted until brown
- 1 tsp cumin seeds, roasted until brown
- 2 tbsp roasted peanuts
- 1 tbsp shrimp paste
